Cucumbers

For a few years when living alone in Hawaii and learning how to eat again, I used to thoroughly enjoy eating cucumber slices with blue cheese and sun-dried tomatoes. Nowadays I eat cucumbers when they are available and just add them to meals I am preparing.

A cucumber is about 95 percent water.

Most of that water is held inside the cells of the cucumber. A cell is the smallest living part of a plant or animal. Each plant cell has a large storage space filled with water, held in by a stiff cell wall.

The water in plant cells presses outward against each cell wall, like air inside a balloon. That pressure keeps the cucumber firm. When you bite into a fresh cucumber, the cells full of water break with a crisp snap. A cucumber left out too long loses water from the cells, and the cells bend instead of breaking, so the cucumber goes limp.

Since a cucumber is mostly water, eating a cucumber gives your body mostly water. But a cucumber also gives some vitamin K and small amounts of potassium and vitamin C. Most of the fiber and nutrients in a cucumber are in the dark green peel, so eating the peel gives the body more.

Botanically, a cucumber is a fruit, because a cucumber grows from a flower and the seeds for a new plant are inside the cucumber.

Eating foods full of water, like cucumbers, lettuce, celery, and melons, is one way to give your  body water.

You are welcome to eat cucumbers and get water.
