Yellow Eggplant

I did not know eggplant came in any color except purple until I saw one recently at the farmers market.

Eggplant can be purple, white, green, yellow, or striped. The purple color comes from pigments in the skin. A pigment is a compound that gives something its color. A yellow eggplant simply does not make the purple pigment.

The English name eggplant came from white eggplants that people in England saw in the 1700s. The white eggplants looked like eggs growing on a plant. In England today, eggplant is usually called aubergine. The name eggplant stuck in the United States.

Eggplant is botanically a fruit, because eggplant grows from a flower and holds the seeds of the plant. Eggplant belongs to the nightshade family, along with tomatoes, peppers, potatoes, and poha.

Eggplant is mostly water and gives your body fiber and potassium.

The flesh, or inside, of an eggplant is spongy, which is why eggplant soaks up oil and flavors when cooked.

I sliced the yellow eggplant in half lengthwise and cooked it in on a barbecue. It was chewy and tasted bland. Next time, I would brush it with oil and salt before cooking, so the eggplant has flavor to soak up.

You are welcome to look for new colors of food at your market.
