Salad For Breakfast

Who says breakfast can't be a salad?

By the time I ate this morning, I had been awake for several hours and had completed my morning movement routine and some housework. My body was ready to be nourished.

The word breakfast comes from breaking a fast. While you sleep, your body goes hours without food. So the first meal of the day breaks that fast.

But nothing about the word says what food breakfast has to be. Many breakfast traditions in the United States, like cereal and bacon and eggs, were spread by advertising in the 1900s.

Breakfast is simply the first food that nourishes your body after the night.

My salad

My salad had arugula, two hard boiled eggs, avocado, and pesto, with large chunks of purple and yellow potatoes on the side.

The eggs gave my body protein. The avocado and pesto gave healthy fat. The potatoes gave carbohydrate. And the arugula gave my body vitamin K, vitamin A, folate, and calcium.

Arugula belongs to the same plant family as broccoli, cabbage, and collards. Eating arugula raw lets a compound and an enzyme in the leaves meet when you chew. A compound is a substance made of two or more elements joined together, and an enzyme is a substance that causes a change to happen. Together they make a new compound your body uses.

Purple potatoes get their color from anthocyanins. Anthocyanins are pigments, compounds that give food its color, and they are also antioxidants, which protect your cells from damage.

I honestly don’t remember anything about my arugula salad or that morning since I am writing this post weeks later. I can say that I just happened to make a salad this morning. I was meeting a girlfriend at the park and made enough to share with her and her daughter. Knowing they like cucumbers, I added extra cucumber. Even though today's breakfast salad had different ingredients, the idea is still the same. Eating a meal like a nutrient dense salad for breakfast nourishes my body after a long night of fasting.

You are welcome to eat whatever nourishes you in the morning.
