Toast
Throughout my life I have enjoyed toast with a variety of toppings: peanut butter and jelly, cheese, avocado and sprouts, almond butter and bananas, and margarine.
Today I toasted a thick slice of whole wheat sourdough bread that I cut from a loaf I bought at the farmers market. On top I piled spicy cheese, pesto, and avocado. I turned my toast into a nourishing meal.
The bread gives me carbohydrate, which my body uses for energy.
The cheese gives me protein.
The avocado and the pesto give me healthy fats. The fats also helps my body absorb vitamins A, E, and K from the cheese, avocado, and greens in the pesto. Those vitamins dissolve in fat rather than in water.
The greens in the pesto give me vitamins.
A slice of toast is a base for whatever else I have. Over the years my toppings have changed as I have learned more about food. What has not changed is that toast holds whatever I put on it.
