What’s On My Plate

Have you ever heard or said, “There’s nothing to eat,” after looking at food in the kitchen? I have. But, eating foods based on their nutrients, rather than desire or taste, helps me make nourishing meals and use all the foods I have.

Today I started creating my meal from leftovers I had in the refrigerator. I feel efficient and responsible when I clean-up after myself and use all my food.

Today in my container:

• Protein pasta (leftover)

• Cubed taro (leftover)

• A large part of an apple (leftover)

• Older greens (leftover)

• Blue cheese, walnuts, dates (added)

Abundance can include making use of leftover food. One family I know gives some of their leftovers to their chickens. Another family lets their dog get the leftovers. When I had cats, they would help me eat the food. Nowadays, I eat my leftover food.

I’m eating this meal sitting next to an open door inside a friend‘s humble home near the ocean. I am taking care of her cat. The house is surrounded by greenery on all sides. I hear the ocean waves pounding the rocky shore. There are periodic sounds of birds in the trees. The breeze is a welcome comfort. My long sleeve shirt and my portable fan keep mosquitoes away. The cat is my companion as I eat. The meal is cold since everything came from the refrigerator, but it is very satisfying. The older greens still have a crunch, the taro is less firm than a week ago and can provide different nourishment as it ages, the apple is sweet, and the protein pasta is chewy. 

What’s in this meal:

• Protein — pasta, blue cheese, walnuts

• Complex carbs and fiber — taro, greens, apple, pasta

• Healthy fats — blue cheese, walnuts

• Natural sweetness — apple, dates

• Vitamins and minerals — greens, apple, taro

Nothing went to waste, and I ate well. That is abundance.
