What’s On My Plate
Today on my plate (or in my container):
• Broccoli
• Lentils
• Greens
• Hard-boiled eggs
• Purple sweet potatoes
Packing this food was easy and quick because I had prepared everything beforehand.
The purple sweet potatoes were cooked overnight in a crock pot with olive oil and Hawaiian sea salt. The hard-boiled eggs and lentils were cooked earlier and stored in the refrigerator. The greens, eggs, and purple sweet potatoes all came from the local farmer’s market.
The time consuming work was done. Creating this lunch was just placing the ready food in my container.
The meal was about room temperature. The raw broccoli gave it crunch while the potatoes and lentils were soft. The eggs were dense and filling. Everything was nourishing.
