Why the Food In My Container Is Significant Today

Today my lunch has rice and potatoes in it, and I put them there on purpose. This is significant because I used to be afraid of carbohydrates.

I don’t know where the fear of carbohydrates came from. What I do know is in my 40s, I was afraid food with carbohydrates would make me fat. Now I know carbohydrates are what my body requires to function properly, and what my body looks like is the result of me taking better care of myself.

Here is what is in my container. On the bottom is rice I cooked yesterday morning, now cold. On top of the rice is ground sausage and ground meat that I cooked overnight in the crockpot with purple potatoes. The potatoes cooked for nine hours and some dissolved into the broth. On top of the meat is raw purple cabbage. On top of the cabbage is a big avocado.

Every part of this meal was an intentional choice.

I bought the purple cabbage yesterday because I knew I would want a vegetable with the rice and meat. Raw cabbage keeps its vitamin C, which heat destroys, and it gives the meal crunch against everything else that is soft.

I used two kinds of meat because I have noticed my brain works better when I eat more protein. I am using my brain extra right now while making purposeful changes in my life, and the protein helps me to think well.

The avocado went in because it was ripe. The tree outside is dropping avocados daily, so I’m adding one or two to my lunch every day. The fat in the avocado also helps my body absorb the vitamins in the cabbage.

The rice and the potatoes are there because my body requires the carbohydrates in them. I walk and move a lot every day. Carbohydrates are what my body burns to keep me moving.

For many years I looked at rice and potatoes and saw food I was not allowed to eat. Now I look at rice and potatoes and see fuel, fiber, and vitamins.

I am not afraid of carbohydrates anymore.
