Flour Tortilla
Today I am eating whole wheat flour tortillas that were made on one of the islands here in Hawaii.
A flour tortilla is made from four things: flour, water, salt, and fat. The fat is usually lard or shortening. Many tortillas bought at stores also have baking powder in them.
For my meal today, I filled my flour tortillas with truffle cheese, some pesto I made, and a mixture of avocado, hard boiled egg, and salt.
Eating these tortillas reminds me of chapati I used to eat in East Africa.
Chapati, a flatbread from India and the countries around it, became a common food in East Africa. When I lived in Tanzania, I could find chapati being made in remote coastal villages, along the street side in busy crowded cities, and in local restaurants. Chapati is made from the same four things as tortillas: flour, water, salt, and fat.
On a Zanzibar island, I would purchase a chapati someone else made and add to it an omelette I cooked with slices of avocado and tomatoes. I’d roll up everything in the chapati and eat it.
Tortillas and chapati come from opposite sides of the world. Both are flatbreads made to hold whatever else you are eating.
A flatbread is mostly carbohydrate, and carbohydrate gives your body the fuel it requires.
You are welcome to wrap your food in a tortilla or chapati.
