What’s On My Plate
Today in my containers:
• Orange potatoes (baked with olive oil, salt added at the end)
• Collards, arugula, spicy greens
• Pesto
• Red pepper
• Cucumber
• Garbanzo bean protein pasta
• Poke
I intentionally took time to cook the orange potatoes in the morning. The potatoes had been sitting in a bowl for a week. The farmers’ market I would attend later in the day would most likely have new potatoes to purchase. After washing the potatoes, I sliced them and soaked them in some water. After the water, I rubbed some olive oil on the potatoes, laid them on a baking sheet, and placed them in the oven at 425° for about 45 to 60 minutes.
The rest of the items were quick and easy to assemble because everything else was prepared beforehand. In one container, I put all the vegetables with pesto. Another container held the potatoes once they were cooked and cooled. And a third container had beans in it. (Beans were my intended main protein source.)
I left this meal sitting in my car with an ice pack while I walked to the farmers’ market. I thought I was being very smart and saving my muscles for carrying the new food back. As it turns out, I was at the market several hours longer than I expected. And when I returned from the market, rather than eating the beans, I substituted that protein with poke I purchased.
I was so happy to be eating. I was nourishing my body with the flavorful pesto, the chewiness of the poke, the softness of the orange potatoes, and the crunchiness of the veggies. But this meal did more than nourish my body.
The meal really showed me how much I value nourishing myself. I carry food to eat when I am ready, but I am flexible. At the market, I thought about food all afternoon because I was food shopping. While being aware of what I was eating, I ate food offered by people who were nibbling on snacks. I made choices about what to purchase and not purchase. I walked back to my car and meal with heavy bags full of local foods. Nothing overwhelmed me. The day was a success.
I share posts about what I eat because seeing my nourishing food can be beneficial for someone else. I also share because of the relationship I have with food. I value the experience of eating and nourishing my body.
